@dlochner Dave. Sounds like you were a pizza maker in another life? I now have the dough.. What about the sauce and where to get the good sausage here on the West Coast? Now those are the important secrets.

John, was never a professional pizza maker. Have tried for years to make a decent pizza. Finally figured it out. We like a thin crust NY Style pie. I had about given up when we remodeled our kitchen and the new oven had a Pizza setting, apparently the oven heats from both the top and the bottom on this setting, helps to melt the cheese.

If you like NY style pizza, try Dom Peppino's Pizza Sauce.

Wow! This is what real sailors do in winter. I do love grills and smokers. Never seen one of these. That's awesome.

Dave, tell your wife you do need it! You know pizza. I love thin crust NYC style pizza, and I can't get it here in Maine. Anywhere. The pizza I get here is like biting into a mattress.

In a previous house, I built a wood fired grill into the kitchen. There, we used to grill pizza's in the super hot oven. My family loved it and we've missed that option. So when I saw this online, it looked interesting. It's fired with wood pellets(we heat with wood pellets). After about 10 15 minutes of firing, the stone and interior push 800 degrees F. It's tricky to get the right burn with the pellets, then keeping it stoked, while you cook.

We make the dough ahead of time and let it cold proof for a couple days(in the garage, our walk-in cooler in winter). Then I try to work the dough as thin as possible.

Not much goes on top, like real Italian pizza. Anything is sliced thin or grated loosely so the crust isn't drowned by topping(which prevents full cooking).

Once it's roaring out the stack (it's impressive!) you slide the metal peel in and jerk the pie off onto the stone. Close the door and count to 10,... then quickly slide the peel under the pie, and pull out-rotate, and back in. Count to 7,...do it again, a couple times until it looks right, and that's it.

Real, thin crust pizza. I've only had as good as this, in Rome. :)

I love these kind of portable bivouac cooking systems. No power or bottled fuel necessary.

Gunni, you realize the oven temperature is about 800* F, I suppose if you like your fish well done and charred....

A hot fast sear is one of the best ways to cook a salmon, mackerel, yellowfin, or trout. Their oily nature cause them to crisp up nicely while staying moist and juicy inside.
