Probably this fall, I want to paint the exterior hull. I've read about Interlux "Perfection" paint and how it is claimed to flow out to look like it was sprayed on. Does anyone have experience with this product, or opinions about another good paint?

top side only?

Do you keep your boat in the water? If so, as in more than a few days at a time, you need a bottom paint on the wetted surface. For the topside (water line top gunwale) Perfection is very good. If you are doing the job by hand you need to prep the surface very well and primer with the appropriate primer.
You will need two people, one to roll and the other to 'tip' the surface. I did mine a few years ago and the results are a vast improvement over the gel coat that was oxidized almost to non-existence.

I trailer the boat, but will put a hard-coat anti-fouling paint below the waterline. I am interested in using the Interlux Perfection from the waterline, up. Next on the agenda will be the deck. Currently it is a chalk-like oxidized finish that absorbs every tiny stain.
