I find filling a plastic bag with anything that is runny to be a chore but I have made it easier by cutting both ends from a food can of the size portion I want and putting that into the bag. Then with the help of a canning funnel and the bag sitting on the table, I can fill the can and remove it from the bag with all of the food inside the bag and not all over the seal.

I looked at some canned chicken yesterday at the grocery store and found that 30 cents per ounce is a sale price and fresh chicken in the meat case was 1.49 per pound not on sale. I often buy at 69 cents per pound. That's just over 4 cents per ounce.

Ross, at what temperature do you bake those beans? also when do you introduce the bacon, do you fry it first or just cook it with the beans? It sounds delicious!

A few details, oil the beans with 2 teaspoons of salt for about 1 hour. Drain them reserving the liquid. in a large bowl place the beans, raw bacon and onions. ( the beans need all of that fat from the bacon). In 4-5 cups of the cooking liquid mix the sugar, molasses, 2 teaspoons of salt, and the mustard powder. Pour the liquid mix into the beads and mix to distribute the beans, bacon and onions. Pour into a large covered baking dish or roaster and bake about 3 1/2-4 hours at 350 F. When they are done gently stir them ladle them into hot pint jars and adjust the lids and process at 10 psi sea level, 15psi above 1000 feet for 80 minutes.

Edit to add: check the liquid level in the beans frequently and replenish as needed. they should be rather soupy and nearly awash. you don't want them dry.
