I have a Weserbeke 12c Two with 700hrs. After about 3 hrs of running
the oil pressure drops to ZERO and stays there. while at Zero the engine
sounds the same as when it shows oil pressure and the Temp stays in
the normal range.
My question is; if oil pressure is truly at Zero shouldn't I notice a change
in the engine noise or operation?.

With just 700 hrs, I'd replace the pressure sensor and see if it repeats. It may be failing after a period of heat and vibration. If it does repeat, I'd check wiring; maybe by temporarily bypassing what you have with a short set and a guage.

Yes, you would expect a change in the engine

With no oil pressure the engine will self destruct in short (a minute or two). most likely a connector is getting corroded and as it heats up from engine heat it changes the resistance of the circuit. The oil pressure sender is just a variable resistor so any change in resistance or corrosion will show up as a change in pressure.
