Nice

Got a JABSCO pump head with a holding tank and when we pump it to flush - whoh! you get a smell in the cockpit. Whats happening? Is this normal venting? Doe it vent through the discharge cap? Should I use some chemicals to mask the odor?

You do have to use something in the holding tank

But not a chemical product. I suspect your best choice is Odorlos...it works WITH the naturally occurring bacteria in the tank to prevent odor instead of only masking it with a worse odor as chemicals do. It also helps if you at least nominally rinse out your tank after pumpout and thoroughly flush it out with clean fresh water several times a season. I think you'll find the link below helpful too.

Nice; On my Ben 40 we flush with fresh water drawn from the shower hose,just enough to do the job. I don't use anything in the holding tank and have had no odor for the last five years.

I suspect your downwind neighbors might disagree

No odor INSIDE the boat does not mean none out the holding tank vent...and I've yet to see a sailboat with a tank that's aerobic enough to prevent any odor from being created inside it without some help from a holding tank treatment.
