This is a book about a fellow who set up a Cal 20 for offshore sailing and, in particular, to do the Single-Handed Transpac. It has extensive appendices that would likely be of use for the purpose your propose. Since Capri 22's were not designed for offshore sailing, I expect one would be in for a fair bit of work to make one seaworthy for that purpose. Presumably, though, it could be done. Please keep the Board up to date on your project, I'm sure a lot of us would be interested!
Good fitting companionway hatch boards that won't fall out if you get knocked down. Bow hatch closed & dogged, companionway hatch closed to help retain the hatch boards.
Another thought. Make sure you have the rear compartment latch secure. ( Mk 1's) Again if a sudden knockdown, to prevent from opening and allowing water to come in. I think, earlier J-24's had a compartment similar, then changed their design and totally removed the compartment hatch/cover.
