added a shelf to the pots and pans area under the stove, so now it's more organized. Also, changed the little sliding doors into hinged ones, so accessing the area is easier. It used to be difficult to get the larger pans out after I put in the additional shelf. we also have a long utensil 'caddy' velcro'd next to the alcohol stove for long utensils that won't fit in the short galley drawers. We put bins into the under seat storage to accommodate packaged and bottled food that doesn't need to be kept in the refer. But the best thing has been adding pressurized water and a small dish rack that fits into the little sink that I found at Ace hardware. Now we don't have to take up counter space to dry the dishes! I'm sure there are lots of other things that can be done like changing to electrical refrigeration...but that's further down the wish list.
