Marine plywood
My recommendation would be to use a good grade of marine plywood with a teak veneer. The stuff is pricey, but the glues used will hold up better. You can find several suppliers on the internet. My advice would be to epoxy seal all edges prior to reinstallation to minimize water damage. Use your old bulkheads as patterns for the new. Good Luck.
