Good idea. Home Depot may have bar sinks that could fit.
Things to consider:
1. Depth - check your waterline before you make it too deep, it could drain slower.
2. Double sinks - I hear ya about pots&pans. My f-i-l's sink in his kitchen is so small I wanna cut the pots in half - they won't fit!!!

But I recall some conversations here about double vs. single sinks. I like my doubles, small, too, but not tiny and OK for the pots & pans I have on board, they're not tiny either. I keep stuff that can roll around or need to dry in the dry sink and can always use the wet one, anytime, even under sail. Not kidding: can you get smaller p&ps?
Just stressing these ideas for you to think about before you pull the trigger.
