I am installing a PSS dripless and am replacing the coupling while I'm at it. Willl I be able to put the new coupling on my original shaft? I have a 1985 Catalina 30. I saw on MaineSail's site that the new coulping will need to be machined. So will the shaft need to be as well? If that is the case and I need to remove the shaft should I replace the cutless bearing and our have the prop turned? I know that is a lot all at once but any help would be great!!

Yes the coupling and shaft should be fitted and faced. The facing will most likely be good, though I have seen it out, but the fit over the shaft is critical. The shaft to coupling fit is generally done by hand and can take a bit of time. They can also check the shaft for runout while you're there. H&H is good and they are on the North Shore in Salem.
