Need new helm wheel... custom?

Finally putting 37ft cutter back together in St Thomas after the hurricanes of 2017. Looters took just about everything, and the latest insult is they took the WHEEL. I'm over being upset about it and now just want to replace it. So the question is... is there any reason not to get creative with this? I realize it would probably be easy and cheap to get the stock Hunter part, but I also think it would be cool to get something custom, perhaps with my girls names engraved on spokes, etc. Anyone have any experience with custom wheel makers?

As a followup, the next restoration portion of the project is new ports and hatches all around. Same question - any custom options I should consider? Especially with the salon portholes I have seen stainless options that seem more robust than the Hunter stock plastic that has all but disintegrated in my 1980 boat...
