My winter project for grandchildren

My cousin gave me an Achilles inflatible. It has wear but the tubes are sound. I have a 26' Hunter and do mostly day sailing or marina hopping so the dinghy isn't used as a serious means of transportation. I have a 1.2 hp Evinrude for it. I want to fix it up so the grands have a skiff to fish from or just ride around Urbanna Creek.
My project is the floor (deck, sole, your pick). It is several sections of 3/8" plywood that have water damage. Several edges are de-laminating. All pieces are still sturdy and show no indications of bending or buckling.
Can they be saved?

My 9' Achilles inflatable came with a fold-up wood floor. I decided that this flexed too much when under way and replaced it with a solid piece of exterior grade plywood. It's still going strong after 17 years.

Making and painting a new floor could be a great project for the grandkids to help with. You could add wood cleats to hold a gas can in place, add a small storage compartment, etc.
