Monitors for waste tanks/ lowering of Table

Hunter 40 Ft Newburyport
We recentley were lucky enough to purchase a Hunter 40 1986. I have not been able to find out how to lower the table to make that area into a bed. Second the black waste tanks do not have any gauges to read the status of the tank(empty, full, etc) I am looking to find a way to add gauges any help out there?
