MAY NOT HAVE TO REPLACE
Butch: I've had (I'm now using the past tense since TIDE just sold) an 85 Hunter 31 since new. Replaced/cleaned the mixing elbow 4 times in that period. As Steve and others have said, getting the elbow off (at least the 2GM) is a potential knuckle buster but doable. However, you may not have to replace the elbow, just clean it. That is what I did the last 3 times (last about 3 years ago). I used a 50/50 mix of Muriatic acid in a bucket and simply put the elbow in it. I also "dunked" the small H2O fitting that leads from the heat exchanger (again this applies to the 2GMF w/ fresh-salt water exhange system)to clean it out also. After a few minutes w/ lots of bubbling, I removed both pieces and rinsed them well in fresh water. After they dried, I (mostly for asthetic reasons) applied Yanmar silver engine paint to the exteriors and put the whole thing back together. For whatever its worth, I put this not fun task on a periodic maintenance schedule for TIDE and removed/cleaned the mixing elbow every 3 years. Since I started this, I've not had any trouble with overheating at any rpm. You can be sure I'll be doing the same with my new boat (Yanmar equipped...just a couple extra cylinders!).
