Ahoy - does anyone know what the replacement LP valve (for propane tank) is for a 93 Catalina? Are these pretty much the standard replacements I see on Amazon?

Propane on a boat is not something you want to mess up. Steer clear of the cheap crap on Amazon. Go with a reputable brand, purchased from a reputable marine store and learn the rules for safe propane use and installation.
That would be the solenoid. Fireboy and Trident manufacture them. They aren't cheap.
You are correct about the solenoid. How hot does it get? If it's concerning, I would look up the resistance of the coil (look for spec sheets or contact the manufacturer) and measure it with a multimeter.
You may have the old style of propane fittings. Few places will refill tanks with them. They were phased out 20 years ago. I had mine refilled and converted by a place that only deals with propane for around $60. I then bought a new fitting for the boat's hose

How is your boat configured? It may not be the same today as it came out of the factory... is it a high pressure or low pressure solenoid? 1/4 in or 3/8 in fittings? We can't really determine that without having direct access to the boat.... is the main and tank propane line also 30 years old? Probably overdue for replacement..,.
Depends upon how hot - most get hot, at least warm. It's rather surprising how much power those solenoid valves consume.
As others have said - don't go cheap on this valve. I have a Fireboy (as @dlochner indicated above) - any good quality marine grade is good. Don't cheap out on this one.... But if it's just getting warm, and works fine - your valve may be just fine.
