Boat Tailors is the place. In fact the Hunter dealer in the area uses them instead of Hunter factory canvas, because their work is so much better. I have a Boat Tailors bimini and dodger on my 356. Good quality, good service. I worked with the boss on the boat to get the dodger set up just the way I wanted. Link is below.

Not yet sure on Boat Taylors
I know they are good but I am happy with my current design and only want to make a few changes. My bimini is collapsable which allows me to fold it up or roll it back out when I need it. I don't think Boat Taylor allows for this option. I believe Boat Talyors will charge $5000 for dodger, bimini and piece to connect the two.

As Paul says, Boat Tailors is the way to go. The Hunter dealer (Racine Riverside Marine) uses no one else.
