Legend 356 / 36 Rig question

We have just had the standing rigging replaced - however the end of the boom is now quite a bit higher than before, suggesting the mast needs to come back a bit.

Any thoughts on what distance between the boom and the arch we should have?

Slab reefing and with the mainsheet hard in.

The challenge may have occurred at the same time as the change in rigging, but it is not necessarily the cause of the higher boom.

My first check would be to validate that the mast is in column. Standing straight when viewed from bow/stern and port/starboard.

That would indicate the standing rigging is holding the mast correctly.
Then, when trimmed, the mast may have a 2º-4º rake to aft and a slight bend in the upper section to aft.

When the main sail is down, the boom should be supported by a rigid boom vang or a topping lift. The goal is to have the boom flat or slightly raised at the aft end to provide adequate clearance when moving about the cockpit. When the sail is up, the boom is supported strictly by the sail and should be level with the boat deck.

Is this not the case?

The use of the word "Had" implies that someone else did it. Maybe a rigger? If so maybe he did it right. The salient test for mast rake is the feel of the helm. Too much rake makes weather helm which is slow. You fight the helm to not round up. Too little rake mast makes lee helm. The boat feels like it doesn't want to go to weather.
So how is the feel of the helm?
Forestay length sets the rake of the mast. If you have the old forestay you could measure it and compare that to the length of the new forestay. If a rigger did it he should have notes on the length. If they don't match and you didn't request a change, ask why it was changed. There may be a good reason - like he has information or experience that caused him to change it.
If he changed it and the helm feels good maybe that's the better length.
With regard to the height of the boom above the Bimini, it and associated tackle should clear the Bimini on tacks. The boom being a bit higher doesn't sound like a big issue. Too low might be.
