Hello to Beneteau owners. I have a 2000 Beneteau 46 Oceanis (beautiful boat!) but have problems with the fresh water system leaking into the bilge. We have tried to determine which of 3 tanks is leaking. We thought it was tank 3 and emptied and closed it off but now we find after filling tanks 1 and 2, fresh water is leaking into the bilge again. To tear out and replace the tanks or put in bladders would be a huge expense. Could it be connections? They are hard to get at. Does anyone have experience with this problem?

I agree with Ron's idea of putting food coloring in one tank at a time. If that isolates the culprit, then start by tightening the fittings on that tank. Hopefully it's not a crack in the tank itself, but could be a cracked fitting. If the tank has push-fit connections they may need to be disconnected and the lines cut square and/ or debarred. If hose clamps are used, they may be loose or have been overtightened to the point where they have cracked a plastic fitting .

All the hose clamp fittings on my 343 eventually leaked. Try tightening all clamps. Most of mine required trimming off the hose end and redoing with new clamps.
My inspection port on the forward water tank also leaked when heeled with a full tank after opening it to clean and inspect. Just took tightening it up tighter although I will admit to a little vaseline on the oring.
I cut a piece of plywood to fit snuggly in the groove on the port plug to give me more purchase.
I like the food color idea. I have tried talc to find leaks with soso results.
We used fluorescent dyes in a power plant to trace leaks but doubt they were potable.

To me, if you're getting leaking no matter which tank is on, the problem is in a common area of the system such as near the pump?

Have you checked the water heater? The pressure relief valve could be releasing prematurely, or the tank itself leaking.
