I have contacted Mars metal mars@bserv.com They do not reccomend it because the 40's have a cast iron keel. It is hard to cut(labor intensive) which means alot of money. contact them the person to speak to is Kevin Milne.
What year Hunter 40 do you have? I have a 1985 with a 5' shoal keel. My only complaint is it does not point as well as a similar boat with a deep keel. Usually only noticable when racing. Want to trade boats? John SV Stressless
