Hey everyone it’s time for me to finish my settees, I’m wondering if I should just oil them with a few coats of teak oil or epoxy them then oil them?

I'm not sure, having never done it, but I think oil over epoxy would just make the wood oily,
until the oil evaporates, that is.
A Youtube couple with a series called "Sailing Lealea" did a complete interior refit
a year or longer ago and covered their work in detail, with epoxy coating at the forefront of their work. Since they did it that way, I thought it might be helpful to check out their Vlog.

Nice project!! Not knowing the table condition, whether you have laminate etc. you might look at these threads for inspiration and ideas on settee table refinishing:

Oil or epoxy. There's no benefit to both. Having said that epoxy does tend to turn milky with UV light which means you have to overcoat the epoxy with something that's UV resistant such as a polyurethane finish. So I would probably either consider the oil finish if that's what you like, or a harder finish if that's your preference. A lot of people like tongue oil but it takes a great number of coats to make it shine like varnish. Many people would only do varnish. I personally think it's just preference of the owner.

Epoxy will seal the wood and oil will not absorb into the wood. So, no to epoxy and then oil over it.

No need to seal the wood with epoxy, just extra work and expense. Either use an oil, like tongue oil or Watco Teak Oil or clean and use a polyurethane, like Minwax. If you go the poly or varnish route apply gloss finish first. If you would prefer a satin or semi-gloss finish put that on as the last coat. Too many coats of satin/semi-gloss finish can make the wood look milky. Clear gloss followed by a semi gloss or satin finish will give it some depth.
