I have some rotting base board underneath my interior flooring (see image). Does anyone have a source or know what the material can be replaced with?

What are the dimensions of the wood you are looking to replace? You have some options: 1) teak from West Marine and others, 2) marine plywood from your local lumber supplier, 3) plastic such as Taco Marine plastic building material from West Marine and 4) other, etc. The forum will offer their experience and recommendations.

Let’s look at your issue a new. Kinda re-birth.
You are having an issue with the structure under your interior deck boards on your Hunter. The basic design is a FRP pan that provides interior structure for the hull. Has it been cut?
Location on the boat, and images of the damaged area are needed to get an understanding of your issue. Can you take pictures and do you know how to “attach them to your posts”?
There are several SBO members who can offer assistance if you ask and give them info as to what you are seeing.

The problem is localized to the galley area under the sink. From what I can describe, our boat has the interior floor boards that are made of teak and holly (I think). These are in good shape throughout. However, in the galley area, the underlayment has been wet and has swelled in some places. From what we can tell the underlayment is some type of coated plywood. The coating is white and is similar to the white material in the original picture of this post. We have addressed the source of the leak we inherited from the PO and want to replace the underlayment boards before anything gets worse. As a result, we are looking for a material that we can replace that underlayment with.

If the location will be at risk of moisture than the use of a plastic may help with avoiding future swelling.
