Having worked in the AC/Refrigeration installation business for a number of years I am well aware of the need for proper insulation in an icebox/refrigerator. My concern with an uncured foam product is its ability to expand beyond your expectations. Also, it is permanent. My question would be...are there any types of foam board or foam pellets that could be used to give a respectable R value?

I do not know of any in pellet form, but there are a number of foam boards available from builders supply that give a fair R value. These are esy to work with, inexpensive, readily available and there is no fear of over expansion. The main drawback is, of coarse, accessing certain areas of the box.
