I am moving a Raymarine speed and depth instrument that was installed in the cocpit to a new pedistall pod. It is leaving me a 5" hole in the fiberglass. Does anybody make replacement covers that can be installed over the old hole?

Yes, it is called "starboard" and is manufactured by Custom Creative Plastics. Lots of chandleries sell the stuff. 1/4" will work fine.

You could put one of those bolt-in rings that have a screw-in center part. It would still allow access to whatever might be behind the cutout.
