I have the little sister ship 32 and it has the identical engine room and cockpit and I still have my original Westerbeke 30 which is much larger than the Universal and I gave it much thought if I had to change my engine when I bought the boat 8 yrs ago and I came up with this.
Remove as much stuff as possible off the engine to lighten the load,then jack the engine up to clear the engine bilge and slide a sheet of 3/4 plywood under the engine that is also supported by the engine room hatch opening, then slide the engine out and use boom to support block and tackle to lift out.
Trying to remove out the front involves to much work removing cabinets and I don't think you'd clear the bulkhead raising the engine to get the oil pan above the engine bilge also the Universal is a light enough engine to maneuver with your hands.
BTW the Westerbeke runs great and I don't think I'll be changing this in my lifetime
