Jon, If I had your boat there is no way I would want to get rid of your brass fixtures with real glass lenses. those are priceless on your boat. I would swap out the incandescent bulbs for LED though.
I love this stuff. I love sailboats and sailing. You guys are a lot of fun. Here, attached, is my attempt at an amp draw chart as I prepare to redo the entire DC side of the system. Any comments or objections are welcomed.

Do yourself a favor and get yourself a battery monitor such as a Victron BMV-700 as they are very short money.. I all my years as a marine electrician I have yet to see one of these spread sheets be anywhere close to accurate. Install the battery monitor as your first project and then, when you know whaty your actual usage is, build the system using actual data..

Do yourself a favor and invest in an battery monitor such as the Victron BMV-700. They are short money, and you have actual data to work from when you build out the system. In all my years as a marine electrician I've never once seen one of these "guestimate" sheets be anywhere close to accurate when compoared to actual usage.
Install the battery monitor first then design the system when you understand your actual daily usage. The Balmar SG-200 is a bit more money but includes a state of health calculation as well as very accurate SoC and is self learning. The Victron works really well as a budget battery monitor and at the price point, it can't be beat.
