What year is your C-30?
Is it a diesel?
What's your temp gauge read?

Has this happened more than once? What year is the boat? Any other symptoms? How much heel during your sail?

Need more info!

1984 m-25 engine the degree of heel is a not a factor. engine temp climbs past 160 before I shut off engine.

Sounds like you should replace your impeller as a precaution, as it is the most likely culprit due to its wear & tear. If your diesel is fresh water cooled I would verify good flow from the exhaust of the heat exchanger. It can be hard to verify water flow out of the exhaust port on the transom while underway, if you have wave action astern. The transom usually is covered with sea water. Where is your boat located on the York? My C-30 is at Crown Point Marina on the Perrin, off York River, near the mouth.

you might also consider checking the sea water thru hull for any blockage as well as the strainer at the shut off valve.

What thermostat do you installed. There are two available, 160 and 180.

No water means it's a blockage or an impeller. To check for blockage, I find it's easier to take the incoming hose off the raw water pump and blow back through it with a dinghy foot pump.

Not a bad idea to clean a blocked line - haden't thought of using dingy pump, but blowing through the hose would likely also work & be quicker.

Have already changed the impeller, and I'm on C dock @ Crown Point on Celtic Ray

Cheers, See ya sometime at Crown Point - I have the older 1980 5411 2 cyl. diesel so I can't really compare my engine to yours. I would guess as noted above either a blocked main water intake thru hull, or a blockage by corrosion in your heat exchanger. Take the hose off & verify as noted above. Good luck.
