Just curious, what is the difference between, say a Hunter 40 and a Hunter Legend 40? Are the "Legends" a special design, or built for a special purpose?

Actually, no difference at all! They are called Legend in UK to differentiate from a British boat builder also called Hunter. Outside of UK they are pretty much universally known as just 'Hunter'. Legends were manufactured in UK for a few years, but even though now all coming from USA, bear the 'Legend' name by the time they reach UK shores.
About 0.5 feet of length. All US Hunter legends are xx.5 foot long. In this case it is significant as 40' is the limit for a lot of light and safety stuff. So you have brighter nav and anchor lights......=$$$
