We have just bought a 27X for racing in England. I would like to make contact with U.S. owners to discuss sail wardrobe etc. I have seen a picture of Pepe with a normal looking mainsail (no massive roach as on the U.K. model) Are all the US 27Xs the same? Do you use a smaller headsail for stronger winds?

After comparing the US and UK versions it appears that the UK main is larger and you have the added benefit of a retractable sprit pole for off wind work. Due to the wide chain plates, carrying a larger genoa will not get you any better upwind performance. I would consider an extra set of tracks further forward and inboard for use with a #3 blade jib.
