I have a Hunter 18 (new to me) and it came with a spinnaker kit. I need to mount the stand-up spinnaker block on each side. Everything else seems to be already mounted. Any recommendations on the best way to mount the blocks or other recommendations about the Hunter 18?

It is available at. @kappykaplan suggests. Look in the downloads section. The owners manual uploaded 2013 will provide Hunter insight.
As an alternative, you have two cleats on the stern. I also have two on my boat. I use them as attach points for my asymmetrical spinnaker sheets. It is very simple set up. 2 standard blocks. A pair of soft shackles, used to attach the blocks to the cleats. Then I rig the spinnaker sheets out side the shrouds, back to the block and forward to a cleat I use to hold the sheet when not in my hand.
This is easy to manage with a crew or when sailing solo.
