Check with the local Brewers yard, I believe there is one in Stratford. I do not know if they do it but Brewers Yacht Haven in Stamford does. Not cheap but much better then sanding. I have sanded down to glass on my previous boat and it was no fun.
I think the best method of paint removal by blasting is Soda Blasting. I would think that walnut shells are also going to be fairly hard on the gel coat.If the person doing the job is good, I would assume that sand is also fine (IF THEY KNOW WHAT THEY ARE DOING).
