What you found is called Luxury Vinyl. It glues down or floats. The product is bulletproof, comes in many colors and flavors. Between 1.00 to 2.00 sq ft for entry level and 2.00 to 4.00 for top of the line. I sell 8 diferent brands: Hearthwerks, VillaStone, Artistek, Starloc, Connecto, Antico, KarnnDean and several others. Forget the self adhesive plank. They do stick to each other but have to be flat on the floor. Not on the slopped walls of the hull. You can use the glue down ones. Most of them come in both forms. Wall must be smooth though. It will telegraph any major inperfection. We use a skim coat product to get the floors very level. However since you are not walking on it, it will be O.K.. The main caveat is that you must use the right glue. We carry 12 different glues and all do a diferent thing, so use the one recomended by the manufacturer. The product is waterproof, the glue usually is not. As several restaurants found out here in Myrtle Beach. They heavily mopped the floors every night and presto, loose floor boards.
Product is easy to cut with a box knife and glue is applied with the recomended notched trowel.
I have used it in walls were applying wood was too expensive. Looks great. I use the leftover large tiles as drawer liners on my boat.
