This is an older design - Eno doesn’t have any instructions. You can find the “manual” online but in the installation area it says to see the “separate diagram and installation instruction sheet”, but I have not been able to to find it. So, next step is to see if someone in the sailing community has one installed or experience with something similar.

And I have the stove in hand now.

Photos would help us see what you are dealing with…

Now that I have the stove in hand, I can confirm it came with these yellow mounts to hang the stove on the pin on the blue bracket. So, I gather you screw the yellow mounts on the cabinets, and drop the stove over them so the pins in the blue bracket slot in. This way the pivot point is above the stove allowing it to gimbal correctly so all your food doesn't end up on the floor. However, I'm still unclear what the green bracket is for.

Here is a close up of the pin area, which has a black rubber spacer on the pin, sandwiched between the blue and green brackets.

I think that is exactly right. But I don’t know what the green bracket is for either. Can you remove it and try hanging the stove on the brackets? It isn’t some sort of gimble lock is it? to keep the stove flat and preventing it from pivoting (my gabled stove/oven does have a way to lock it (but not a bracket like that).

if the stove and brackets are too narrow to fit the opening, you might need to “shim” the brackets on both sides so the stove pins fit correctly in the hangers.

@Tally Ho - for such a simple thing how it should work sure isn’t obvious. The green bracket, if also screwed to the cabinet, would prevent the stove from flying off its pivots in a knockdown. Maybe that’s what it’s for?

Also, holes in the green bracket match up with the screws in the blue piece. I was thinking maybe it was for adjusting height of the stove but it wouldn’t then line up with the pivot bolt.

Still looks to me like you screw these holes to the stove opening supports, and Bobs your uncle! A stove that pivots when the boat heels.…

The green bracket plays a key role in the pivot, because the pivot bolt is free to fall out unless it is anchored in position with the green bracket. But unsure how it’s supposed to go together. Maybe like this?

The view from here . I don't think you have the correct parts . The black grommet shown is for routing wires through a hole in sheet steel .
The six sided hex bolt that goes through it would never be used as shown .That configuration will shear the interior diameter of the bushing .

I’m giving up on the green bracket. It must be for a non-gimbal/built-in scenario.

But the pivot bushing is threaded all the way through. The six sided hex bolt threads in to, I gather, somehow anchor the loose pivot bushing in its place.
