How to fix cabin finish peeling

Our Hunter 30, 1989 has the interior walls (seem like a Formica type finish on a backboard) starting to peel, especially in the head but also in the cabin itself.

I have attached some pictures which should describe the problem better.

Any suggestion on how to fix or replace the finish and also how to prevent the problem for getting worse.

I had the same problem and fixed with marine vinyl. I sanded the finish to rough it up and smoothed the area that peeled. Brushed on contact cement to wall and then onto vinyl. Adhered vinyl to wall let dry for 24 hours, used a razor blade to trim then marine mildew resistant caulking to finish edges. Done! Water proof and looks great.
