How much insulation on Capri 26

Would like to improve insulation on icebox in Capri 26 1991. Spending severals 3 days or more in a row during summer, how to know what degree of insulation is left in icebox without taking it all apart. I do not want to re-build the whole icebox since it was built as one piece with the sink and burners . Insulating from the inside would loose to much space. Is spray foam any good for this utility or not ? Has anyone ever dismantled his icebox to see what it's in there if any ? As far as I know, Capri 26 were designed to be daysailor boat . Any suggestion ?

Two inches of the pink Home Depot sheet foam is good, but more is always better.

We also fold our sleeping bags and store them on top of the unit during the day

Problem is I can not put stiro-panel since the icebox was built as a unit. I would have to break the whole thing down. Will try to see inside with a small camera but I don,t know wich insulation foam is better with the best R factor available. Your idea is best but would implicated too much work to put it back like it was before if do-able.Thanks for your comments.
