A lesson learned in my old age.
I know better but the weather, distractions and procrastination all got together yesterday. Yesterday I boiled up 8 chicken drumsticks for cold boneless meat and skimmed the fat for cooking. I had planned to can the broth but put it off and left in on the kitchen table. This morning I set about to can it and brought it to a boil. It didn't look right and the smell was a bit off. A taste proved that it had soured overnight and was unfit to keep.

In this warm weather leftover food will spoil in less than 12 hours. The house is air conditioned so on a boat the time would be even less. Plan to not have left over food if you don't have refrigeration on a boat during warm weather.
