I had to replace the terminal block for my bilge pump and float switch, which is located in the bilge..... Is there anything available besides dielectric grease that I can use to protect this connection from splashes and excessive moisture?

You could abandon the block and just use heat shrink covered butt splices. Terminal block is not really needed.

If you don't care to eliminate it as others have suggested, you can try Corrosion-X.

Liquid electrical tape for the cheap and easy route. You can also make a plastic cover similar to this using clear plastic, long screws and nuts. Those holes in the plastic are so you can get a screwdriver in there without having to remove the cover. Plastic can be bought or rescued from heavy blister packaging
