Hot water tank on B321

I have to fix a fitting on our hot water tank. In the meantime, I bypassed the hot water tank so I have fresh water. Does this affect the engine in any way? I know the engine supplies water to the hot water tank and then returns. I suspect this is to help heat the hot water tank, not to cool the engine...

Does anyone know?

Any have experience with "instant on" hot water supply systems instead of the 6 gallon variety?

Correct, it is to heat the water in the tank. The engine gets cooled by the heat exchanger. I would think instant-ons are for 110 volts only? Maybe not, though.
