May be a really dumb question. My old boat had a standard jib with a port and starboard sheets
I noticed on YouTube that someone used one long sheet for both starboard and port sides. For my genoa what should I use?

What is easy and efficient is my choice.

Traditional has been two sheets one starboard and one port.

It could be a single line tied to the sail in the middle of the line. Giving you one starboard and one port.

Some boats are using one continuous line.

Answer for you... your boat your choice.

Not a dumb question at all. There was a thread about this back in February. Do a quick search for "Single genoa sheet".

I find that one long sheet can be cow-hitched to the clew ring for a very 'smooth' connection that does not catch on shrouds.

Your particular boat will also have a bearing on what's best for you. Having one sheet worked well with my Hobie Cat but for my current boat twin sheets seems to work best. Try it both ways for a while and decide for yourself what works best for you and for your boat.
