FYI - Rebuilding galley faucets on 2000 era Hunters (H340)
My galley fresh water faucet was leaking badly around the valve stem whenever the water was turned on. After 10+ years it was time to rebuild them.
Turn off the water supply.
Remove the plastic H/C center caps on the knobs using a sharp knife then remove the knobs with a slotted screw driver.
Remove the valve stem and collar assembly with a wrench. The valve stem itself can be removed from the collar by unscrewing from below.
There is a "00" valve seat washer on the sealing end of the valve stem, held in place by a slotted screw. I replaced it with a conical shaped washer but the original appeared to be a flat sealing washer. [If the valve seat itself is chipped you may have to take it to a plumbing supply to find a replacement.]
There is a # 8 sealing "0" ring half way up the valve stem that is hard to get out but must be replaced as it is the source of the leaks around the valve stem. There is a # 12 "0" ring under the collar that holds the valve stem. When replacing the stem into the collar, hold the stem with a pair of pliers and screw the valve stem in all the way in. It will be tight because of the new "0" rings. Be sure the valve stem is fully in the ON (up) position. Replace the entire collar & valve stem assembly onto the fixture and tighten with a wrench. Replace the knobs and caps.
On the galley sink there is a movable neck where the water comes out. It is held in place with a knurled ring. Loosen the ring and pull the neck up and out of the fixture. There is a #12 "0" ring on the base of the neck that should be replaced to seal the assembly. There is also a white plastic split ring on the base but it appears to be for stabilizing the neck and I did not replace it.
