I did not want to use wood myself. So I used plastic fence boards that I found on Home Depot's web site! They work well! And no painting or staining! I have one photo handy that shows them so I will add it here. If you would like more let me know!

This is a fabulous idea and appears much more sturdy than 1" X 3" PVC trim and more esthetic than treated or painted lumber.
Do you suggest using more than 1 U-bolt per end?
What did you use for rail end caps for that finished look?
More photos would be appreciated.;)

I don't have any close ups of our boards. I just used deck boards. I mounted them however on the outside of the stantions, using s/s u-bolts from McMaster Carr. That way the nuts and bolts are out of the way and can not damage the fuel, water jugs or me. I did not need acorn nuts. It also moved the jugs an inch outboard giving us a bit more space to walk down the side decks.
