The screw opening for filling water tank? Maybe in the sun the parts expand? I use a winch handle to unscrew them

So it's been a while since the tank was filled? Some time ago there was a post that someone put a pipe on the winch handle and still could not uncrew the cap. It did, however, pull the fitting out of the deck... and then he replaced it with new. This is a good example why anything the screws/unscrews should be exercised often, say once a year. I see the same problem with shutoff valves under the sinks in the homes.

More than likely the O-ring under the cap has glued itself to the internal part of the fitting. Try some food grade mineral oil to penetrate the area between the cap and the body and let it soak awhile. Another trick is to get a piece of dry ice and set it on the cap. It might contract enough to allow you to break it loose.

The worst case scenario is that you either have calcium deposits in the threads or corrosion because of salt intrusion.

That is a common problem on Goiot deck fittings. I have replaced the one for my holding tank on my Beneteau First 375 and replaced 3 of them on a friends Oceanis 430. It seems to be an electrolysis problem and they seize up tight.

Exactly right. The Goiot deck ports are aluminum alloy and if torqued too tight much seize and you are done. Access the underdeck, remove and replace with the new Beneteau stainless steel part. Use a proper bedding compound.
