Folding Dutchman System Sail
I have the Dutchman system and the sail has natural folds (its memory to help flake the sail on the boom). After sail is stretched out flat on the ground, two people, one on each side, luff and leech. We then place one hand on a fold and then reach out for the next fold and pull it back and over the one hand that is holding the sail down. you should now start to see a long stack of sail. Keep doing this until the sail is all folded. Now start from one end of the stack of folded sail and roll it up and put it in the sail bag. It is easier to do than to explain. This is just one sailor's way to fold. I am sure you will get other ideas.
