Ham Steak

A slice of ham 1/2"-3/4" thick tastes great on the grill. It doesn't really have to cook, it's already cooked. Just warm it up. We make some macaroni and cheese below, slice up a fresh pineapple and that's dinner. A couple of side benefits, save a chunk of ham and fry it up with your eggs in the morning and if the weather outside is crappy at dinnertime, it's easy to fry it below. If we're having real steak on the grill, a side dish we make for that is little red potatos, sliced into wedges. Put them on a piece of foil with some salt, pepper, a pad of butter and dill weed, wrap it up to make a flat package and throw it on the grill with the steaks. 15min. on side 1 10-15 min. on side 2. Potatoes should be brown and crispy when you open the package. Tom s/v Orion's child

When it's cooler out....

Mulled wine 2 lemons 2 oranges 1 - 750 ml bottle of medium, to full, bodied red wine Nutmeg (to taste) Cloves (to taste) 1 oz brandy or Cognac (or to taste) 1 cup (250 ml) granulated sugar (optional) Herbal or citrus influenced tea (optional but excellent) Water (optional softener instead of tea) 4 large cinnamon sticks 4 candy canes Instructions for making four large portions -Cut lemons and oranges into slices. -Pour the red wine into saucepan and gradually heat. -Add fruit slices, nutmeg, cloves and brandy. -Keep an eye on the mixture and wait until it becomes hot to the touch. -At this point you could blend in sugar or water (if desired). -Pour into glasses/mugs and add tea (to taste). -Garnish with cinnamon stick and candy cane. Serve My second favorite is a bottle of Scotch without the cap. For safety sake, always have a supply of beer for backup. Ferg

Love the Grill!

Sailboats and grills were built for each other! Cook everything from "Smokies" to "Pineapple stuffed Chicken Breasts. Variety is the key for me and don't be afraid of trying something new. Boneless chicken thighs cooked very slowly with just a little pepper and maybe a little of your favorite BBQ sauce are simple. Very juicy and make a nice snack cold. Brushetta with lots of basil, garlic, olive oil on slices of French bread with some fine grated mozza or some other fine cheese with a glass of wine makes a great starter. Brush or dip the bread with a little olive oil and balsamic vinegar just before grilling and add the toppings. Grilled asparagus with olive oil and balsamic vinegar is very tender as well. Grill and turn often until you have light grill marks on the asparagus. Grilled shrimp with a little ginger sauce are hard to beat. Anything grilled with a cold beer....
