Good idea
For another idea, I was considering replacing them with a vinyl pin stripe (color to match my boot stripe). This might look a little more "updated" than the teak piece and a lot less cost than the stainless.
One of our C34 skippers did this many, many years ago and it looks just fine. Others have taken them off completely, with little visual issues. It does make the coachroof seem a tad "bigger", but usually only when you're on board and looking up to the bow when sitting, say, on a perchseat or standing over a winch on just when coming aboard. Your choice if they go is to leave the holes or finish washer and screw the holes.
Good idea if you don't like the teak.
"Updated" has nothing to do with it, our friend did it well more than 15 years ago on an '86 boat.
