Very few long term cruising people refrigerate mayo. Or catsup or mustard for that matter. I've used the squeeze bottles for years- Lived aboard three years and always had it on the counter. Mayo is a hostile environment to bacteria anyway.

The oils in mayo will separate if mayo is left uncovered and it will look ugly. But it doesn't spoil, the vinegar in the mayo kills the bacteria.

has anyone ever tested
I don't know if it counts as a test, but I regularly sailed for weeks with eggs bought (at the store) before leaving. They never went bad, even after 3-4 weeks. We did turn them around about once a week (even if it did not make any difference). True, this was at pretty low temperatures (usually, +5 - +20 C) and a while ago, before we even knew to be afraid of just about anything.

It takes 21 days for a chicken egg to hatch. So, the egg should be safe for at least 21 days or the poor chick would never hatch. And that's an egg that sits in a nest and has a warm mother hen sitting on it for a good part of the day.

The hen also cleans the eggs. My great Aunt, would know which of her "Layers" were produce and which for the pot. She would alter hens every 3 days to extract freshly cleaned and laid eggs.;)
