Is it okay to open your diesel deck fill and add fuel from a jerry can while you are under way and motoring? I refer not to the possibility of spills or getting seawater into the tank but is there any detriment to the engine?

No problem. I have done that many times .. tank should be clean otherwise you could stir up stuff that might plug a filter while engine is running and there is no "settle time" otherwise, no problem.

Yes

I did it once entering a inlet and my gauge was bouncing around so much near
a quarter tank and did not want to motor into this inlet that I never did before and wind was around 25 knts on the nose.
I don't know what it's called but I use this hose that you shake like crazy
and fuel flows from jug into tank with out any spilling and so easy.
