I would try to build a pop top because that way you can leave the mast step where it is since the drop in headroom starts at the mast support post and goes forward into the v berth. Unless you rip the foredeck off and raise it too you really gain no headroom. The area of the over the center sole is the only real area you gain any headroom. The pop top option allows you to lower it for vision, inclement weather etc. like sail handling with a firm foot area. Also you dont have to hack at the mast at all and all the current standing rigging is still usable at no cost. The construction of the pop top should be easy and you can use the existing tracks and hatch at no real cost.
