Does anyone know where I would find postings or such of Captains looking for crew in the Caribbean? I'd like to use my vacation time as a working/learning opportunity in Bluewater sailing...

You might want to look at joining Offshore Passge Opportunities. I did the Annapolis trip (Newport-Annapolis/BoatShow-Newport) with Hank Schmit on a Swan 48 one year ago.A most assume trip. We went about 60 mile out in the Atlantic and then up the Chessy, through the C&D Canal, down the Delaware and arround Cape May back to Newport. All in just over 10 days. We experienced a little bit of everything.Hank is in touch with lots of delivery skips, especially in the Northeast. He helps arrange deliveries to the Carribean
