Refit in New Orleans
I'm interested in a refit of my 1967 Pearson Commander.
Who should I use?

deck and floor have some soft spots
cockpit seat needs work

I've had an old boat of some sort in New Orleans for many years and have used all of the marine services at one time or another. All of them are capable of doing what you need, there will be a variation in price and you really need to get a quote from each because it will vary. Of the normal three, Seabrook Marine, Sentes, or Schubert's, I have found Seabrook to be most professional over the years, and always use them for bottom painting. But all are capable of doing good work.
What you want done will be expensive if done by a yard, for a rewire I would find an electrician with marine experience and hire them directly - searching around will find some contractors that will do the individual work for much less than putting it in the boatyard - but it will be more trouble...You can quickly exceed the value of the boat getting all your work done in a boatyard, which is why most of us with old boats work on them ourselves...part of the hobby.
There is a small outfit that has been in business for many years called Junius Ship Shape in the Canal leading to Orleans Marina - not sure if they would do all you want, but they have been around for many years and seem to do good work but I have no experience with them.
