Does anyone know the pulling weight of these boats on the trailer? Which year models are best and why? Best and worst thing about them besides the price and small cabin?

What specifically do you mean by pulling weight on the trailer........tongue weight? If so, it should be between 10 -15 percent of the combined boat and trailer weight Boat Towing Guide: How to Trailer a Boat - boats.com.

And for my learning does the towing capacity of a vehicle include the weight of the vehicle?
For instance my jeep weighs about 4,000 lbs. Its towing capacity is around 6,000 lbs. So, a trailer and boat would have to be under 2,000 lbs. Is that right?

Towing capacity is the maximum weight a vehicle can tow. Whereas, Gross Combined Weight Rating {GCWR), which is the maximum weight of your vehicle with a trailer attached, as determined by the vehicle manufacturer, or combined weight means the weight of both the tow vehicle and the trailer together. Might consider obtaining the following weights at you local moving company truck scale:
1. tow vehicle with trailer/boat hooked up to obtain GCWR.
2. trailer/boat unhitched from the tow vehicle to obtain a total towed weight.
3. trailer/boat weight hitched to the tow vehicle off the scale to obtain net trailer/boat weight.
4. subract 3 from 2 to obtain tongue weight.
That is what I do to make confirm my trailer is not overloaded for the tow vehicle.

That is what I do to make confirm my trailer is not overloaded for the tow vehicle.
The method above is how I determined the pin weight (weight of the loaded trailer king pin on the tow vehicle bed hitch) of my fifth wheel trailer.
While towing my just-purchased 16 home from Sarasota to Pensacola I didn't experience any trailer instability but I can lift the tongue easily with one hand and I'm no longer strong. If it doesn't require a complete reengineering of the beds and cutting/welding of the winch pedestal, I'm going to move the boat forward a couple of inches. I'd like at least 60-75 lbs tongue weight.
Good thought. It came with a spare. I've taken a close look. I won't need to change the bunks, just loosen the U-bolts and the cable, slide the pedistal forward an inch or two, tighten the U-bolts, and winch the bow tight. A spare mount may be within the playmoney budget after I get the running lights functioning.
